Ice wine is a very special, highly flavorful, concentrated sweet wine. Ice wine grapes are left hanging on the vine long after all other grapes have been harvested. This extra long growing season gives them very high levels of natural sugar and amazing flavors. Then, when the temperature is cold enough they are harvested while frozen. This usually occurs in the very early morning hours. The frozen berries are pressed and the resulting syrup is even more concentrated as most of the water from the berries is left in the press as ice. The yield of these frozen berries is about 1/10th of what non-frozen berries yield. Also, by hanging in the field as long as they did the crop is reduced daily by birds, racoons, wind, rain, and other natural forces.

So, as you can see, ice wine is a very special event! We have been able to make a very limited amount (only 24 cases) and we are very excited to share it with you!
